Chicken Noodle Casserole

I don't often think to post recipes on here, but I thought while I was thinking of it, I should post this one because Joe and I (and Layla) thought it was really good last night--and easy:).

1 lg onion, diced
1/4 cup butter
3 (10 oz) cans chicken chunks or 4 cooked chicken breasts
1 pint sour cream
1 can of cream of chicken soup
1 can of cream of mushroom soup
3 cup shredded cheddar cheese
1 (8 oz) package egg noodles
4 oz buttery round crackers, crushed

1. Prehead oven to 350. In medium skillet, fry onion in butter until softened. Pour in 9x13 pan.
2. In large bowl, combine chicken chunks, sour cream and soup. Stir in 2 cups of cheddar cheese. Stir in uncooked egg noodles. Pour over onions in baking dish. Top with crumbled crackers and remaining cheese.
3. Bake 30 mins or until top is golden and noodles are soft.

I made mine in an 8x8 and didn't use as much sour cream, chicken or cheese and omitted the onion since I didn't realize my yellow onion had gone bad. I didn't really think it needed it. I added some onion and touch of garlic seasoning and salt and pepper. I also only had German egg pasta in the house so used that instead and really liked it in the dish.

Gibs' Tubes

Gibson had his tubes put in his ears today and did great! They told us to be at the hospital at 6:30 this morning, so we arrived at about 6:20, turns out the surgery wasn't until 7:45 so it felt like we waited awhile! Gibson did well waiting, but it's kind of hard to watch a kid in a hospital room that just keeps wanting to explore! Thankfully the surgery did start on time though. The drug they gave him b/f taking him away made him a little loopy so he was all smiles as the nurses took him away to surgery. The surgery was super quick, I think only like 5-10 minutes and he seemed to recover pretty quick too. They warned us that often kids come out of anesthesia crying because they don't know where they are, but he came out to us cuddling with the nurse:). He then puked on the way home which they said could happen, but seems to be fine now.

Layla also did well sleeping at "Auntie" Mandi's house! A big thanks to her for letting Layla stay overnight there! She was her quiet shy self when I dropped her off (how she often is when we first arrive somewhere), but she quickly warmed up and Mandi said she went right to sleep and woke up shortly after Mandi's kids. She must have been worn out from all the fun, as she fell asleep on the couch when we got home. Joe transfered her to our bed since Gibs woke up and wanted to just play by his sister on the couch, and so Layla woke up for just a second, and then fell right back asleep. I don't really like her napping too much anymore, as last week she didn't nap at all and then this week when she did nap she then took forever to fall asleep at night. So I'm thinking she doesn't really need naps anymore. Guess I knew that day would come eventually:).

He took off walking as quick as he could the other day while getting dressed...

He doesn't normally pay any attention to the tv, but does like it when there is singing or dancing:)...

Hopefully now he will start feeling better! With all the goop coming out of his ears, I can see where it would make a huge difference as to how he can hear!!!
